Original Soto Betawi Indonesia recipe

Ingredients (for 6 servings):


2500 ml of water

500 ml coconut milk from 1 coconut

400 grams of brisket (brisket / rawonan meat)

200 grams of boiled tripe

200 grams of boiled lungs

10 pieces of lime leaves, bone removed

7 teaspoons of salt

6 cm cinnamon

5 lemongrass stalks, take the white & crush it

3 cloves

3 cm galangal, crushed

3 tablespoons of oil for sauteing

3 bay leaves

2 pandan leaves

1 teaspoon sugar

1/2 nutmeg

1/2 teaspoon ground pepper

Ground spices:


15 shallots

8 cloves of garlic

2 cm ginger

2 teaspoons ground coriander

Supplementary material:


50 grams of fried chips

4 tomatoes, cut into pieces

2 1/2 teaspoons of lime juice

2 spring onions, finely sliced

2 teaspoons fried shallots


How to make:


Boil water in a saucepan, then boil tripe and lungs together with 4 cm crushed ginger, 2 pandan leaves tied in knots, and 2 salam leaves until tender. Drain the water and wash off the offal, then cut into squares.

Bring 2500 ml of water to a boil and boil the brisket until cooked. Cut the meat to the size of one bite. Don't waste the broth.

Strain the broth and boil again with the brisket, tripe, and lungs.

While waiting for the stew to boil, heat the oil and saute the ground spices and cinnamon, ground nutmeg, cloves, lemongrass, galangal, lime leaves, and the remaining 1 bay leaf until fragrant.

Enter the stir fry into the meat stew, then season with salt, ground pepper, sugar, and coconut milk.

Cook until all the meat and offal are really tender.
